While my pre-kid idealism led me to believe that my children would eat their crusts I have long-since come to terms with the fact that there are some battles that are simply not worth fighting. I love making special sandwiches for my kids and these are an easy way to do so. They're also a super easy way to make healthy sandwiches seem appealing when served next to cupcakes and cookies at my son's preschool potlucks! We love them for french toast too!
